Mum’s liver pate
My mum makes a most fabulous liver pate. Peder can’t stop eating once he launches into the pate. Lots of friends have tried it and they praise the pate. How to ferment your food
Wash, peel and grate the veggies. Rinse and chop herbs. Mix together then put in glass or ceramic jar. The food must be covered in liquid. If there is not enough liquid from veggies, add water. Put ingredients under pressure (you can sit a glass jar with water on top of the veggies in the glass or ceramic jar) and make sure they are covered by liquid or they will go mouldy or rotten. If the food goes mouldy scoop it off. If it goes rotten place it in the compost heap. Energy is never wasted. Keep the jar at room temperature until the fermenting is finished after that keep in fridge. Eat as condiment every day. Years ago, to be more exact in 1998, when we were still travelling around Australia in big circles we made camp at one of the many National parks in Northern Territory. We were not the only ones who had found this spectacular spot with lovely water holes and nice bushwalking. A couple were camping in the same camp ground and on the bonnet of their car stood a cardboard box. We walked past this camp and box a few times a day and after two days the owner of the cardboard box stroke up a chat. One of the first things he wanted to know was if we could guess what the box was all about. Wrapped Pork Mince Patties in Cabbage Leaf
250g pork mince Salt, pepper, dill and parsley 1 egg 2 tablespoon of plain flour 1 carrot, 2 handfuls of Shallots, 2 handfuls of Zucchini, 6 Beans. Clean and chop carrot, shallots, Zucchini and beans. Then put in a food processor and process until small bits and pieces. Mix all ingredients. Make 6 patties out of the mixed ingredients. Grab hold of 6 leaves of Old Women Gossip Cabbage. Blanch the leaves in boiling water then dip in cold water. Place a Pattie on each cabbage leaf. Wrap into a parcel.
