Oyster Celebration

300g of Oysters                                                   

50g of Spring Onions                                            

1 Carrot                                                                 

150g Cauliflowers                                               

100g of Mushrooms

1 Tomato

Potatoes

300 ml of pure cream

100ml of red wine

Black pepper and fresh leaves of Winter Tarragon

 

Chop spring onions green part, mushrooms and tomato. Break cauliflowers into small florets.

 

Pour the cream and red wine into the pot. Boil until cream is reduced to half. Add mushrooms, spring onions, green parts and chopped tarragon, tomato and black pepper

Boil for 1 minute. Add oysters let boil for 4 minutes.

 

Served with boiled potatoes, spring onions white part and cauliflowers.

 

Additives:  220 found in the red wine

 

Steve’s comments: (Steve was our great oyster dish taster)

“I think that oyster celebration is one of Peder’s masterpieces

I like the sauce because it is smooth. The sauce took out the richness of the oysters.

This is definitely a five star meal but I really don’t like oysters”.
