Oyster Burgers

12 Oysters                               

1 Tomato                                

Lettuce                                 

Cucumber                              

Pickled onions                      

Onions                                   

½ Red Capsicums                    

Bread rolls                            

50g of butter

 

The dressing:

1 egg yolk

1tsp of white vinegar

Half a tsp salt

A pinch of Black Pepper

A pinch of Mustard powder

250 mm of Sunflower oil

250g of Sweet Mustard pickles

 

How to make the dressing:

Mix egg yolk, vinegar, salt, pepper and mustard powder well. Make sure that all ingredients have same temperature or else the dressing will separate. Add sunflower oil little by little mix well. Add 250g of fine chopped sweet mustard pickles.

Sauté oysters and the sliced onions in butter

Slice tomato, cucumber, lettuce, red capsicum and pickled onions. Stack on bread roll with sauté oysters and onions.

Add dressing to taste.

You can also serve the burgers with fried egg.

 

Steve’s comments: (Steve was our great oyster dish taster) The Oyster Burger without egg:

“I like this because I cannot taste the oysters very much. The dressing is very good. This is a compliment”.

Steve is rattling his plate excited to taste the Oyster Burger with egg.

“Oyster burger with egg, the lot and dressing could go global if Colonel Saunders and Ronald Mc Donald knew these recipes. That’s on the edge of greatness franchise greatness”.
